October Recipe: Soylicious® Mexican Chicken

This recipe was picked by my husband Danny. There are a lot of Mexican Chicken recipes whirling around the internet right now.

This is our version. It is a great homemade meal hack that uses rotisserie chicken and black soybeans. It is delicious!

Black soybeans are always an excellent choice.

Soylicious® Mexican Chicken (5 Ingredients!)

Prep Time: 15 minutes (YEA!)

Bake Time: 3-4 Hours in a crockpot

Getting ready: Save time with this simple recipe by having all your ingredients lined up and ready to go.

Ingredients:

  • 1 rotisserie chicken

  • 2 cans Rotel

  • I cup of frozen roasted corn (plain canned corn will work too)

  • 1 ½ cups of cooked Soylicious® black soybeans

  • 1 package taco seasoning

Directions:

STEP 1: Remove skin from baked chicken. Remove chicken from bones. Set aside.

STEP 2: Get ready to layer.

  • Pour one can of Rotel (juice and all) into the bottom of your crockpot and spread across the bottom evenly.

  • Layer chicken across the top of the Rotel.

  • Sprinkle ½ of the taco seasoning across the chicken.

  • Add the corn and black soybeans.

  • Pour 1 can of Rotel (juice and all) across the top.

Step 3.

  • Sprinkle last ½ of the taco seasoning over it all.

  • Set your crockpot on high and leave it alone.

  • Cook for 3-4 hours.

Step 4.

  • With 2 forks shred chicken into smaller pieces.

  • Stir.

  • ENJOY!
