Edamame: A Healthy Choice for Our Kids
August marked the harvest of our Escomame soybeans in home gardens across several states.
From all accounts, the yield was outstanding!
I received a number of pictures of young people picking edamame and even snacking on a few in the garden!
It is a sight for sore eyes, as we say in the south.
So much about the health of our children over the last decade has been bad news. Increasing levels of childhood obesity has been stunning.
Soybeans are a complete plant-based protein; nutrient and fiber rich. And the good news is they are growing all around us.
Early indicators show that young people increasingly like them.
US plant-based food sales reached 7 billion past year (2020).
Results from the May 2021 United Soybean Board “Soy Protein and Flexitarian Study” shed new light into growing consumer interest in soy foods.
While the “dog days” of summer have been challenging this past month, the overall forecast for the plant-based protein marketplace is bright. Market analysts predict continued, unprecedented growth.
This is very good news for our children.
