December Recipe of the Month: Soylicious® Cream Cheese

Check out the holiday wreath charcuterie board, dips, spreads, and desserts at a friend’s home this past week.

During the holiday season I am reminded of life’s greatest blessings, friends and famiy.

I especially appreciate the holiday cooks who prepare a place at the table for both me and my food allergies.

What does a holiday spread usually look like for someone with serious food allergies and diet-related health conditions?

Not very friendly.

There can be consequences after everyone goes home.

The last couple of years I have learned a lot about food, nutrition, and how easy it is to prepare recipes everyone can enjoy. You probably have no idea how much friends and family will be touched by this simple act of kindness.

You can prepare traditional family food in new ways!

Such good news for food lovers!

It has never been easier.

Ask ahead of time about any food allergies or diet-related health conditions your guests have and prepare accordingly.

Some of the most common food allergies are dairy, peanuts, and wheat. A safe bet is to also plan for guests with type 2 diabetes and cardiovascular disease.

Some basic menu tips include:

-gluten-free chips, crackers, and dessert options (including delicious frozen gluten-free pie crusts - this does not require much effort),

-fresh fruit & vegetables,

-plant-based dairy alternatives for making dips, vegetable sides, entrees, and desserts.

There was something for everyone to eat at my friends house.

Make your own Soylicious® cream cheese!

This recipe is easy on the budget and only takes about 5 minutes to whip up.

You simply start with firm tofu. It is so easy!

Did I mention it’s also delicious?

I did a price check in two stores yesterday.

Eight (8) ounces of plant-based cream cheese was $5.99 (.94 an ounce).

The price for tofu was $1.69 for 16 ounces (.11 an ounce).

Including the additional ingredients, you still save a little over 70% by whipping up your own Soylicious Cream Cheese!

Soylicious® Cream Cheese

This is an easy recipe that saves you time, money, and saturated fat!

Soylicious™ Cream Cheese

Prep Time: 5 Minutes

Serves: 4

Ingredients

  • 14.5 ounces of extra firm tofu

  • 3 Tablespoons lemon juice

  • 2 Tablespoons extra virgin olive oil

  • 2 Tablespoons tahini

  • ½ Teaspoon of sea salt (plain salt will work as well)

DIRECTIONS

Let me introduce you to my friend tofu.

STEP 1: Remove the excess water from the tofu.

  • Drain the tofu in a strainer.

  • Wrap the tofu in several paper towels and squeeze the excess water out of the tofu.

  • It will break up, but this is OK.

 

STEP 2: Mix the ingredients in a small food processor/blender. It’s Easy!

  • Break the tofu into chunks and place in the processor.

  • Add remaining ingredients and blend for 5 minutes until the mixture is exceptionally smooth.

STEP 3: Chill for 2 hours and serve.

  • Can be prepared ahead and stored in the refrigerator. Best if used within one week.

  • Use as a spread for bagels, etc. Blend with seasonings as a dip or use to prepare a favorite dessert.

Note: I included plain Soylicious® cream cheese on my Thanksgiving charcuterie board. Plant based sour cream was also a hit in the traditional corn casserole my daughter made. I love that sweet young woman who looks after her mama. : - )
