July Recipe of the Month: Soylicious Chocolate Mousse

“Christmas in July” Sweet Treat! 

Have you ever eaten soybeans for dessert?

Well, you can.

You can enjoy this lower fat, no cholesterol dessert with a cut in the calories to boot!

Did I mention that is both easy and delicious?

No one but us will ever know it is a healthier version of this decadent dessert!

Soylicious Chocolate Mousse (in 3 easy steps)

Prep Time: 30 minutes

Chill Time: 3 Hours

INGREDIENTS:

  • 2 Cups semi-sweet chocolate chips

  • 2 Cups whole soymilk

  • 2 14-ounce cubes of firm tofu

  • 2 teaspoons of vanilla extract

  • 30 raspberries (or other berries)

Step 1:

  • Melt the chocolate chip in a bowl in the microwave on defrost setting, stirring after every 30-45 seconds.

  • Continue until chocolate is completely melted.

  • Remove from microwave.

Step 2:

  • Combine tofu, soy milk, vanilla and chocolate in a food processer.

  • Blend until smooth with a uniform color.

 

Step 3:

  • Spoon into individual serving dishes.

  • Chill for at least 3 hours.

Before Serving:

  • Top with berries of your choice.

  • Garnish with mint and maybe a few leftover chocolate chips.

  • Wait for the applause!  : - )
