July Recipe of the Month: Soylicious Chocolate Mousse
You can enjoy this lower fat, no cholesterol dessert with a cut in the calories to boot!
Did I mention that is both easy and delicious?
No one but us will ever know it is a healthier version of this decadent dessert!
Soylicious Chocolate Mousse (in 3 easy steps)
Prep Time: 30 minutes
Chill Time: 3 Hours
INGREDIENTS:
2 Cups semi-sweet chocolate chips
2 Cups whole soymilk
2 14-ounce cubes of firm tofu
2 teaspoons of vanilla extract
30 raspberries (or other berries)
Step 1:
Melt the chocolate chip in a bowl in the microwave on defrost setting, stirring after every 30-45 seconds.
Continue until chocolate is completely melted.
Remove from microwave.
Step 2:
Combine tofu, soy milk, vanilla and chocolate in a food processer.
Blend until smooth with a uniform color.
Step 3:
Spoon into individual serving dishes.
Chill for at least 3 hours.
Before Serving:
Top with berries of your choice.
Garnish with mint and maybe a few leftover chocolate chips.
