December Recipe of the Month: Soylicious™ Southern Bread Pudding

This is the perfect holiday dessert.

So simple but can look so fancy!

It is also “drop your spoon” delicious.

I have made this bread pudding for over 30 years. Due to my Alpha-Gal allergy, I substituted the original pet milk and butter with soy milk and Smart Balance buttery spread.

Did I mention how easy it is to make?  

Reduce your holiday stress. This dish can be made the day before and refrigerated.

I like to warm it a bit in the microwave (if chilled) before I place it in serving dishes.

With only a few ingredients, it is also an economical dessert that helps you avoid holiday crowds at the grocery stores. . . what is not to love?

Warning! This can be addictive!

As an added holiday gift, this recipe has almost 100 less calories per serving than my original recipe.

Soylicious™ Southern Bread Pudding

Prep Time: 1 hour

Chilling Time: 2 hours

Serves 6-8

Ingredients:

  • 2 cups soy milk

  • I/2 cup (or one stick) of plant-based margarine (Smart Balance is what I use)

  • 3 eggs

  • ½ teaspoon salt

  • 1 ½ teaspoons vanilla

  • 1 cup sugar

  • 3-4 slices of white bread (or the equivalent) -or- 2 – 2 ½ cups cubed (I used French County Brioche)

Directions:

Getting Ready:

  • Heat oven to 325 degrees. 

  • Spray non-stick olive oil on bottom and sides of a loaf pan and set aside.

  • Place loaf pan in a larger baking pan containing 1 inch of water and set aside.

STEP 1: Get everything ready for this one-pan process!

  • Break your bread into chunks and set aside.

  • Combine eggs, salt and vanilla, Beat until mixed well.

  • Add sugar to egg mixture and blend well.

  • Measure Smart Balance and set aside.

STEP 2:

  • Place soy milk in a pan on burner on medium high. Stir frequently until milk is steaming (scalded).

  • Add Smart Balance cut into chunks and turn off the burner. Let Smart Balance melt in the pan, stirring occasionally while melting.

  • Remove pot from burner and add egg mixture to soy milk and mix well by hand in pot of warm soymilk and Smart Balance.

STEP 3:

  • Drop bread cubes into egg mixture (in the loaf pan) and mix slightly until the bread is fully coated.

  • Place in the preheated oven and bake for 50-55 minutes.

Let cool for a couple of hours before serving in order to set.

 

You can garnish with fresh fruit, caramel or chocolate sauce! Yum.

Refrigerate if any is left!
