May Recipe of the Month: Banana Soy Smoothie

Just look at this creamy treat. YUM!

As the weather warms up, we all want something “easy peasy” as we rush out the door or simply sit on the back porch.

Did I mention that this smoothie is delicious?

With only 199 calories, this recipe makes a large smoothie, actually enough to share (you just might not want to).

This rich and creamy treat has 7.3 grams of protein, is very high in Vitamin D and calcium, low in saturated fat and has no cholesterol. You can reduce the total calories even further by substituting the honey with Truvia or another calorie-free sweetener.

Since soy is a complete protein this quick and easy smoothie can be a meal replacement.

With the price of groceries going up right now, don’t ever throw another banana in the compost again.

Banana Soy Smoothie

Prep Time: 5 minutes

Serves: 1

Ingredients

1 frozen banana (broken into chunks)

1 cup light soy milk

1 cup ice

1 teaspoon honey

¼ teaspoon vanilla extract

DIRECTIONS  

Getting Ready: 

  1. Pre-Freeze peeled bananas (broken into chunks).

STEP 1: There is only one step!  

  • Place frozen banana, ice, soy milk and honey in a blender.

  • Blend.

  • Pinch of cinnamon and nutmeg

  • 2 Tablespoons of unsweetened cocoa powder + 1 Tablespoon of honey
