September Recipe: AR Edamame & Fried Brown Rice

With a nod of thanks to our farmers, we are using both vegetable crops in our September entre. With soy providing 16.9 grams of complete protein per serving, this dish paired with a couple of tasty baked egg rolls is a complete, tasty, nutritious meal.
Arkansas Edamame & Fried Brown Rice
Prep Time: 45 minutes
Serves: 5
Ingredients:
3 cups of cooked brown rice (cook 1 cup of brown rice the day before according to package directions. Refrigerate prior to use.)
1 cup of shelled edamame (fresh or thawed from freezer)
2 tablespoons of extra-virgin olive oil
¼ cup of diced white/yellow onion
½ cup of chopped green onion
½ cup of diced carrot
1 egg, beaten
1 ½ tablespoons of soy sauce
Pepper to taste
One day ahead or earlier in the day: Cook brown rice according to package instructions and allow to cool. Refrigerate after cooling until ready to use in the recipe.
Step 1
Get your ingredients ready.
Remove cooked brown rice from the fridge.
Steam edamame in a microwave-safe bowl with 2/3 cup of water, covered for 3-4 minutes. Let set and steam while prepping other ingredients.
Chop white/yellow onion, green onion, carrots and garlic.
Beat egg
Now you are ready to roll!
Step 2
Heat a large skillet or wok over medium heat until warm. Add oil and swirl around the skillet to cover the surface.
Add yellow/white onions, carrots and garlic and sauté until soft stirring frequently (so the garlic won’t burn) for about 2 minutes.
Step 3
Push the cooked veggies to the side of the skillet/wok and add the brown rice. Using a spatula, let the rice cook in the oil for about 30-40 seconds before stirring to allow the rice to fry a bit in the oil. Repeat stirring the rice frequently until the rice is heated throughout.
Strain water from edamame and stir into rice. Stir vegetables in skillet into the rice and edamame as well.
Step 4
Push mixture to the side in skillet/wok and add beaten egg. Stir egg until fully cooked and blend into rice mixture.
Add soy sauce and a little black pepper and blend well.
Enjoy!
NOTE: You can add cooked shrimp, bacon, chopped chicken or beef to the fried rice but you don’t need to. Soy provides the complete, high-quality, plant-based protein that makes this a complete entrée.
